Pan Sauce w/ Zucchini Noodles & Venison

Grocery List

  • 1 Zucchini

  • Shallots

  • Cherry/Grape Tomatoes

  • Small Can Tomato Paste

  • 1 bunch fresh Parsley

  • Fresh Basil

  • Salt

  • Red Pepper Flakes

  • White Wine Vinegar

  • Venison (if you are able to source it)

  • Fresh Garlic

  • White Wine

  • honey




Marinade Recipe




  1. 1/2 bunch of Parsley

  2. 5 basil leaves

  3. 1/8 cup olive oil

  4. 2 tsp minced garlic

  5. 4 tsp Salt

  6. 1/4 tsp Paprika

  7. 1/4 tsp Cayenne pepper

  8. 1/8 tsp Chili powder

  9. 1 tsp honey

  10. 1/2 cup white wine vinegar

Purée all ingredients using a stick blender(or blender/food proccessor.) Marinate meat for at least one hour up to 24 hours. I always recommend making a fresh marinade anytime your going to marinade your meat. The flavor seems brighter with fresh ingredients.

Sauce Preparation

cut all ingredients ahead of time so you can enjoy the process. I am going to be making a quick rustic pan sauce to go with the zucchini noodles.

  1. 3tbsp diced shallot

  2. 5 cloves of garlic

  3. 2 cups halved cherry tomatoes

  4. 1/4 cup white wine

  5. pinch of salt to taste

  6. 1/4 tsp of red pepper flakes

  7. 1 tbsp fresh basil

  8. 2 tbsp fresh Parsely


Drizzle olive oil in a pan, warm on medium heat. Add the shallot, cook until shallots become translucent around 5 minutes. Add garlic and continue to cook on medium heat for an additional 3 minutes.


Add tomatoes red pepper flakes and white wine. Allow to cook on low heat for around 10-15 minutes or until they are stewed and soft. Add salt to taste. Next add your parsley and basil and allow to cook on low covered for 10 minutes.


Meat preparation


  • Marinade Venison back strap

  • Cook to your liking 130/135 degrees (medium rare) 135-145 degrees (medium)

  • Let rest for 5 minutes, this will allow the juices to distribute evenly through the meat.



Zucchini noodle preparation.

I used a spiralizer that I borrowed from my mother in law. There are methods to make zoodles with a peeler or a mandoline slicer. I'm no professional when it comes to these, I recommend giving it a google for ideas.


Preparation

To prepare the noodles, drizzle a pan with olive oil and place zoodles into pan once warm. Add salt to taste. Cook until they start to soften, very Al dente is what we are looking for. Zucchini tends to get very mushy if cooked too long.
