Light Cream Corn with Anaheim Peppers

This is a quick side dish that is meant to be a low fat/low calorie option, that doesn't cut corners when it comes to flavor. All in all, the recipe only takes about 20 minutes including prep work. As always do your prep ahead of time and your measuring. This will make the process of cooking it a breeze.

Grocery List
Two cans corn 160 calories
Half and half
1/2 Anaheim pepper
Cilantro
2 tsp Lime juice 2 calories
1 pinch Salt
1 tbsp diced shallot 7 calories
1 tsp Olive Oil
Preparation
Add 1 tsp Olive Oil and pepper and Shallot
Cook on medium heat until shallot and pepper until soft around 5 minutes

Add 4 tbsp Half and Half
Cook on low for 5 minutes to allow to meld together
Add Corn

Cook on medium low for 8 minutes
Add 2tsp lime juice after about 3 minutes
Add 1 tbsp Fresh Cilantro
Take off heat and allow to rest
Stir occasionally while it rests
It will thicken as it rests, for a thicker more creamy result use heavy whipping cream, the original recipe is designed as a low calorie side dish. Perfect addition to a burrito bowl to add another layer of flavor. Also, it would be a great side with almost any protein.
