Chicken burrito bowl

This is a great recipe for someone who wants to do some food prepping. It will reheat excellent and last a few days in the refrigerator. The chicken marinade has just enough spice to keep it interesting. The rice is a very basic recipe, the lime in the rice matches perfectly with the marinade. It really lets the flavor the of chicken shine through.
Step One - Prepare Marinade
Can ancho chiles
1/4 bunch of cilantro
1/8 cup rice wine vinegar
1/8 cup olive oil
2tsp salt

Step Two - Prepare Rice
2 cups white long grain rice (cook according to instructions)
2 limes (juiced)
Salt to taste
1/4 bunch cilantro

Preparation
Marinade chicken at least an hour, longer would be preferred if you have the time. When a marinade has a very strong flavor like this one I do not like to marinade for longer then 6 hours.
My method for pounding the chicken flat is to place one or two piece into a ziploc bag. Next cover the bag with a kitchen towel and pound it slightly thinner, so it cooks fast and even. Then the options are open(grill, cast iron, hot pan) basically cook that chicken. I try to get some kind of crust on it. There may be a little smoke, don't be afraid of it. Pull from heat when done and let rest for around ten minutes.
Mise en place is a culinary process in which ingredients are prepared and organized (as in a restaurant kitchen) before cooking. I like to prepare all my fixings ahead of time and place them in small glass dishes. This is a process I use all the time when cooking and it really can make cooking more enjoyable and less cumbersome. It allows you to focus on the process, instead of scrambling to finish the meal. What I have realized over the years is how important the process really is. You can give two people the same ingredients and you will receive two very different results based on the process each person uses.
Step Three - Fixings
-prepare while the chicken marinades, take your time

Shredded lettuce
Sour cream
Black beans
Cilantro (chopped)
Final Step - prepare to your liking and enjoy. I like to make some extra to put in Tupperware. If you are preparing leftovers leave out the sour cream, and shredded lettuce, as they would be gross reheated.
